+ 5 Bacon potato salad

My youngest son is an aspiring chef and just brought home this recipe. I just made it and it's pretty dam tasty. Thought I would share it with you all.

2 lbs baby gold potatoes
1 lbs bacon
1 small red onion diced small
2 cloves garlic minced or pressed
1 large ear of corn (I used canned) about 3/4 cup
2 cups fresh baby spinach

Dressing
3 tbl olive oil
3 tbl red wine vinegar
3 tbl dijon mustard
1 tsp sugar
1/4 tsp salt
1/4 tsp pepper

Boil the potatoes until they are fork tender.
Cook the bacon, pat dry and crumble. Keep the grease in the pan and add the onion. Cook until tender, about 7 min. Add the garlic at the end of onion cooking until fragrant.
In a large bowl combine all the dressing ingredients and set aside.
Quarter the potatoes, add them, the bacon, spinach and corn to the dressing bowl and mix well.

He told me to eat it warm which I did and it's pretty good like that but I would imagine it's just as good cold.

Not sure how accurate these are but he gave them to me with the recipe
Carbs 27g, protein 19g, total fat 21g.

Looks good man I’ll give it a shot. I worked on and ran the line for years in a michelin star restaurant. Tons of fun, great people in the industry. But very hard to have a steady relationship unless it’s the hostess lol. That would be my biggest caution.
