Muffins, Raisin-Bran Peanut Butter

This is a recipe that we had at a restaurant I worked at. I modified it a bit to make it more healthy and tasteful. Enjoy!
Yield: 28
Prep: 20
Cook: 15-20 min
Ingredients:
10 oz bran flake cereal w/o raisins
7/8 lb soft wheat flour (self-rising)
4-6 oz sugar, granulated
1 1/3 tsp baking soda
1 1/3 tsp salt
¾ lb raisins, seedless
1/3 pt of whole eggs
24 fl oz buttermilk
4 oz peanut butter
Directions:
- Mix bran, flour, sugar, soda, salt, and raisins by hand.
- Add eggs, buttermilk and peanut butter. Mix with rubber spatula or wooden spoon to moisten dry ingredients.
- Dip into greased muffin tins.
- Bake in 400 deg. oven for 15-20 min or until done.

all ingredients are measured by weight, unless otherwise stated as fl oz or pt (pint).
low carb alternative
The sugar can be substituted with Splenda in equal amounts to lower the simple sugar content. I do this when I make them, and it tastes fine to me. But, I also use Splenda in coffee and oatmeal plus drink diet sodas.

AnonThey're good. I use fresh peanut butter in mine, so I know I'm not getting saturated and trans fats.
