Buffalo meat: need ideas

Grabbed some buffalo meat from the meat market the other day. Was gonna just make some burgers with it, but wondering if anyone has any other ideas for ground buffalo meat

LaTTTimer99T3 Bison Chili
-4 pounds ground Bison
-1 pack uncured bacon
-40 ounces beef broth
-3 cans diced tomatoes
-5-7 carrots
-1 onion
-1 bay leaf
-1 tablespoon basil
-1 tablespoon oregano
-1 tablespoon unsweetened cocoa powder
-1 & 1/2 tablespoons chili powder
-4 diced Habanero peppers (anyone new to these, be careful. Don't touch your dick or eyes after lol)
-Sea salt & black pepper to taste
***This is pretty spicy stuff due to the Habaneros. If that's not your thing, sub in something milder.
***This is considered a cheat-meal recipe for me (very high in sodium, pretty high in fat)
All in all, this is for me the best you can get bison to taste. Check it out; if you're into chili you should be impressed.

Throw a couple eggs and cooked brown rice and form a meatloaf and bake it off. You can also do some kick ass buffalo chili with just a few easy ingredients. Mmm
I like the sound of that chilli. But I've never had buffalo before. Kinda wanna see what it tastes like before putting it in a sauce. But I'll def do up some chilli in the future.
I make a mean chilli. I use cubed stew meat instead of ground. Pinto beans, diced tomatoes, chilli powder, paprika, cumin, garlic, chicken stock (better flavor, trust me), peppers, onions, and some herbs. Off the chain and healthy as shit.
BigpapajuiceI eat a lot of buffalo meat and the problem is its very dry not very much fat in it. I take a little olive oil and garlic and mix into my patty as I sear it on high heat both sides then finnish it off it the oven it seems to be as dry or I will mix in a little 85% ground beef about a ounce or 2 two add flavor and moister
