Salad dressing

ad

Im sure a lot of people here eat quite a bit of salad. Salad is a great acompanyment, or can even stand alone as a meal if you get enough in there .Salad w steak, salad w chicken, salad w eggs, and thats all great but what about the dressing ?
The majority of salad dressings that come off the shelf are garbage, full of corn syrup, colorings, stabilizers and plenty you just dont need. Maries is one brand I will use, but other than that I make my own and you should too.

You can make a tremendous amount of variations if you just have a decent base.
Olive oil is all I use, it has good fats in it and I think it tastes the best, but like all oils it must be emulsified properly, or your dressing will continuously separate, even on your salad.

There are two great ways to go about this, one is a blender. If you add all your dressing ingredients to your blender, then run it for a minute you should have good luck.
If you dont feel like using a blender, then get a nice mixing bowl, get a dish towel and twirl it up, then wrap it in a circle to make a nest for the bowl to sit in. This way you dont have to hold the bowl and you'll have two free hands.
Now I like a strong vinegar mix so I go close to 1:1 ratio, but if you cant take it so strong try 3/4 cup vinegar to 1 cup olive oil. I use Red Wine vinegar, Apple cider and balsamic, but the red wine is a great place to start to get your flavors down.

Put your vinegar in the bowl first .Then add a heaping tablespoon of dijon mustard, sprinkle in some, Oregano, Basil, black pepper, and garlic powder. Now get a whisk and start whisking . As you are mixing vigorisly slowly start to pour in your oil, and continue whisking. This should give you a nice basic dressing that will tast great and isnt full of crap.
For variations I add some parmessan cheese, and a tablespoon of mayo. Another great thing for dressings is a hard boiled egg, but thats best mixed in with a blender.
Well hope this gets you on your way to making better salads !

I tried this, it's not bad for dipping veggies into, but for me it's too thick for salad? I'm using cayenne infused ego and garlic flavored red wine vinegar sometimes a splash of balsamic on there if I'm feeling funky? Smile

Sorry. I meant to spell Protein. Smile
However, I think pot would be an acceptable substitute. Smile

Hell yes... I'll also use fresh pesto as a dressing sometimes.... theres a asian dressing using fresh egg yolks, soy sauce(low sodium) and safflower oil, I'll have to do some digging and see if I can find it..... yummy Salads keep me regular :-) But yea, the Olive oil/Balsamic combo is fantastic!
