Slow cooker ideas?

The other day I made a dish with chicken, rice, carrots, celery and onions and slow cooked it for about 6 hours. It turned out alright but was very plain, if you know what I mean. I ate a few bowls and bagged and froze the rest. Does anyone else use a slow cooker/crock pot and have any good recipes? One of my favorites I make sometimes is slow cooked BBQ chicken with a homeade sauce. Not the healthiest but dang it's good.

I take a 3 to 5 pounds roast, salt, pepper. Sear the outside in a skillet. Take a pack of french onion soup mix pour it on top then I can of cream of mushroom soup. Cook 4 hours on high or 7 to 8 hours on low. Makes excellent gravy for mashed potatoes also. I love this recipe easy to make and makes the house smell great.

If you have one of those portable electric slow-cookers, I like to use those for fondue. Not the fondue with bread and cheese, it's pretty fattening and not really ideal for bodybuilding, I'm talking about the broth fondue that you dip meats and seafood in. Pour in some beef broth, garlic, various herbs and spices of your choice, and a splash of cabernet in there, and you can dip shrimp, scallops, beef, chicken, sausage, broccoli, and whatever other meats and veggies you like in there.
Here's a picture of my broth fondue. I cooked lobster chunks, filet mignon, lobster ravioli, mushrooms, eggplant, bell pepper, and chicken & apple sausage in it. It was New Year's Eve and I had company over so I went all out.

Use a few different sauces for flavor. I used chili sauce, home-made honey mustard, and home-made yogurt green curry sauce.

Swedish meatballs, chicken breasts and then use a fork the pull it apart for pulled chicken, and same goes for pork. I got a gang of shit I do. I'll type some up later and post.
I make my chili in slow cooker. Roughly 3 pounds 97% lean beef, lots of celery, onion, 4 cans of black beans, can of low sodium tomoato soup, and can of tomato sauce. black pepper, green and red peppersm chili powder. It's super thick and not like traditional chilly. But damn it's good. then I throw it on medium and let it sit for 2-3 hours
