+ 1 Best chicken you will EVER have
The Ingredients.
--1 whole chicken, skinned (4-5 pounds)
--2 tsp kosher salt (if you'd like it as salty as the ones in the store, add another 1 tsp.)
--1 tsp paprika
--1 tsp onion powder
--1/2 tsp dried thyme
--1 tsp Italian seasoning
--1/2 tsp cayenne pepper
--1/2 tsp black pepper
--pinch of chili pepper (if you want a little more zing, but we did without it and it was still great)
--4 whole garlic cloves (optional)
--1 yellow onion, quartered (optional)
The Directions.
I used a 6 quart crockpot for a 5 pound bird. It fit nicely.
Skin the chicken and get rid of the neck and other stuff from the cavity. This takes a while but IS A MUST! Once you get the hang of it, it's not so bad.
In a bowl, combine all of dried spices. Rub the spice mixture all over the bird, inside and out. Plop the bird BREAST SIDE DOWN into the crockpot.
If desired, shove 4 whole garlic cloves and a quartered onion inside the bird.
DO NOT ADD WATER!
Cover and cook on low for 5-8 hours. The longer you cook it, the more tender the meat.
Refrain from adding anything (vegetables, spices, ect) we've tried variations and it just isn't the same. Vegetables took away from the flavor, added their own flavor and/or made it taste like a pot roast.
First time my girlfriend and I made this we ended up eating the whole bird in about 15 minutes :/

Yeah...chicken was BANGING! The dark meat(thighs, drumsticks) were the best part, at least I thought so. Definitely falling off the bones...DAMN!!

when you say cook on low, about what temp you put it at?
AnonNot positive what my crockpot is at when on low vs high. Every crock pot Ive come across only has low/med/high/warm settings and this recipe is meant for a crockpot. Not sure if your planning on cooking it a different way?

AnonAlmost ready mmmmm, it's so good. The wife uses all fresh herbs also and it really makes a big difference. Also taking the trouble to find a free run whole chicken is worth the extra time, it seems to take on the flavour even more than the mass produced birds do. Also they are much easier in removing the skin for some reason, not sure why but totally noticable.
I had tried this before but made the Pot Roast mistake adding vegetables etc, it makes the chicken taste like stew more than roast chicken. Run just the chicken and cook your sides seperate, makes a world of difference.
