+ 1 Ranch Buffalo Chicken Roll Ups
I don't have the macros but its relatively clean recipe
Chicken
Packet of Ranch Dressing
Whole Wheat Bread Crumbs (other light crunch coating you like)
Buffalo Sauce (Sweet Baby Rays or Franks Red Hot work well)
Part-Skim Mozzarella shredded cheese
Neufchatel Cheese (1/3 less fat than cream cheese)
Day Before:
Slice Chicken Breast length wise and tenderize (hit it with something to make it flatter)
Place chicken and Buffalo Sauce in zip lock bag and leave overnight
Pre Heat Oven: 400°
Prep:
Line 1-2 cookie sheets with non stick foil
One Plate with Packet of ranch and bread crumbs
Large cutting bored (it gets messy)
Take marinaded chicken and put one tablespoon Neufchatel cheese and top with layer of mozzarella
Roll Up chicken
Place in Ranch mixture and Lightly coat (I only put enough for flavor/texture DO NOT think of normal fired chicken)
Place chicken with the open rolled side down. (or else your chicken will unroll and be a giant chicken cheese mess)
Cook for 20-30 minutes or until juices run clear. Can also be cooked in a casserole dish.
