Dude I’m trying so hard to gain i didn’t have problems gaining before .... I always stay lean I am eating so much food I can’t even count the calories I’m also doing as much time under tension as possible, forced reps and am doing everything I’ve read to help me bloat up a little my strength is there I’m getting results but I can’t like tack on anything extra .... I feel like I need help

If your not counting your calories that's a big mistake.
If your useing protein powders I would stop and drink a gallon of whole milk a day.
I guarentee that and your meals will put weight on you.
You'll need a stool softener for about a week.

Ok when I say I’m not counting my calories I more or less mean I’m taking in about 300 grams of protein a day I’m doing it with eggs meat mostly but occasional protein shake I have about 3/4 of milk a day while milk. I eat everything I see I even wake up in the middle of the night to eat twice. It’s hard to count calories for stuff because I work in a restaurant so I have the luxury of just grabbing whatever I want and just devouring it... which if I were to estimate I eat at least 8k calories a day at least probably more some days ... I could probably get a more solid count yes but Ive counted calories before, could I be eating too much? Is that possible ?

There is your problem. You need to actually track not just estimate. Most people way underestimate what they eat. They think they are eating alot but they really aren't. You really have no clue on what to adjust with your diet if you are just estimating. You will just keep going around in circles and continue to be frustrated until you log everything. Then you can make the proper adjustments.
