+ 4 Chicken & Couscous Salad good for bulking or cutting

Figured I'd share this recipe I made up. It's fuckin delicious and I've been smokin' it lately. It's especially good in the spring and summer.

Super easy too.

Ingredients

  • whole wheat couscous (sometimes I do half whole wheat and half regular)
  • chicken (breast tenders work best i think)
  • grape tomatoes
  • seedless cucumber
  • salt
  • pepper
  • grated parm cheese
  • olive oil
  • white vinegar

Instructions

  1. Cook the couscous with a little olive oil and salt in the water, and fluff it when it's done so it doesn't turn to a solid mess and let it cool
  2. Throw some chicken tenders on the grill, or throw them in a pan (precut or cut after). Just salt, pepper, and garlic powder on these. When they're done, cut them into bite-size pieces and let them cool.
  3. Cut the grape tomatoes into quarters (half then half)
  4. Slice up the cucumber and cut those into 6 pieces for each slice (cut in half, then each half into 3... trust me the smaller the cucumber and tomato are the better it is
  5. Throw the couscous, veggies, and chicken into a big ass bowl
  6. throw some salt, pepper and grated parm on top
  7. add the white vinegar and olive oil and mix that shit up (I recommend adding a little at a time and tasting it along the way unitl it's where you want it)
  8. Throw that shit in the fridge and let it cool. It's better cold and it tastes even better if you let it sit for a bit (but i've also just eaten it right away).

Adjust your couscous/chicken ratios to fit your marcros, depending on if you're cutting or bulking

Adjust your salt, pepper, olive oil, parm, white vinegar and veggie ratios to your taste.

Trust me on this one. Slammin.

Nice man, I love a recipe I can just pull out and house without worrying about microwaving it or anything. Should keep the chicken juicier foo.

Dude it’s great cold. It doesn’t taste too different if you keep the chicken and salad separate and mix it in when you’re about to eat it, either. Still bangin and you can be more precise with how much protein a meal you’re eating
