Been eating extra healthy

I been eating extra healthy but I love French and thousand island dressing so I been looking for a salad where neither is needed so I made an amazing chickpea salad. Decent protein source for a non meat salad.

3 cans of chickpeas
2 containers of cherry tomatoes cut in half longways.
2 bell peppers. I use orange and yellow or red.
2 cucumbers sliced then cut in quarters.
1 large red onion sliced very thin or to your choice.
7 whole garlic sliced thin
3 heaping tablespoons of minced garlic
Big handful of fresh parsley chopped
Small bit of fresh cilantro chopped if you like.
White Vinegar
Extra Virgin Olive oil. A decent quality one
Pink Himalayan Salt
Black Pepper
Low carb Italian dressing

Mix well and refrigerate. I periodically mix it even if I’m not eating it. That’s just me.

Very healthy and refreshing as well as quite satisfying.
