+ 7 Any meat smokers in here???

ad

I really got into smoking meats a few years ago. Did it for quite some time then took a break. I went to fire up my smoker sometime in November/December and the smoker took a shit. I was devastated. Fast forward to Christmas - my father-in-law bought me a new Masterbuilt smoker. I was more excited than the kids! Anywho, I’ve been smoking all different types of meat which has really helped make eating (relatively) clean fun again. My favorites so far are smoked wings and of course - brisket. Anyone else a smoke master or working on becoming one? If so, what are your favorite meats to smoke, and does anyone smoke anything other than meat (let the jokes commence)?

Pictures are: sirloin, wings, and brisket.

I smoked a couple chunks of swiss today in my countertop smoker. The plate to the left is a Lodge cast iron serving griddle that I put over the smoker element to keep the heat off of the cheese. It worked quite well.

Sackbird's picture

Dude I gotta get that smoker. Think I’m going to grab it with my bonus this month.

It's really convenient. I smoked that cheese for an hour. 30 minutes each side. That Lodge griddle kept the cheese from melting too much. It's a Lodge LOSH3. Any chunk of metal should work though. I would have used one of my AR500 steel targets if they weren't painted. Lol That's about the color I get in the outdoor electric smoker after 3 or 4 hours.

scoobydoo's picture

I bought this about a month ago. I've done swiss, muenster and cheddar cheese so far. It's gets a little hot inside. I need to figure out a way to block the heat, but the cheese came out tasty. I have an electric smoker and a pellet smoker. I no longer use the pellet smoker because it sucks compared to the electric smoker. https://www.hammacher.com/product/countertop-digital-smoker

No smoke but there’s short ribs in the crock pot tonight lol

scoobydoo's picture

Nice. Have you ever tried Liquid Smoke? It adds a good smoke flavor. That smoker has 3 racks.

Drexyl's picture

Oh I’m no stranger, there’s a dehydrator, crock pot, electric roaster, all kinds of kitchen gadgets here lol, but with the current living situation, full sized grills and smokers are out. My wife works in real estate management, we have zero rent or mortgage, but are limited by property rules. Don’t be me, it’s not glamorous lol

scoobydoo's picture

If there was no garage to keep my bike in, I'd ride it up the stairs to get it inside.

Drexyl's picture

Bro what do you have? I stopped riding when I met my current wife. Had a bunch over the years, my last was a Suzuki Bandit 1200, carbureted. Put on headers, a jet kit for the nozzles and D&D exhaust. I do miss it, but at the same time, Stephanie probably saved my life.

scoobydoo's picture

I've gone for smaller bikes as I've gotten older. If I have something with a lot of power, I'm going to do stupid shit. I have 3 older 2 stroke project bikes, I had a Suzuki TU250X and now I have a KTM Duke 200. It's an absolute blast. The 200 has about 10 more horsepower than the TU250. I've wanted the 200 since it came out in India in 2012. It didn't come to the US until 2020.

I need this in my life

Damn Scoob, holding out on me? You saw me oogling over this smoker. Couldn’t give your bird friend the discount hookup? I know dogs typically kill birds but we were different. I thought we was tight.

I like that episode.

Sackbird's picture

Me too. That show used to be so epic. Definitely fell off in later seasons. The best seasons were the ones before they got cancelled. After they came back they had to be careful with their jokes. And that’s gay.

I turn the stove exhaust fan on and it's not bad. It probably wouldn't be bad without the fan. No smoke really comes out unless you take the top off. When I took the cheese out and put it on a plate, that's when I could really smell smoke. Same as when you bring stuff inside from the smoker.

This thread title sounds like a profile on grinder….no homo….

scoobydoo's picture

Swiss cheese is awesome smoked. If you like Swiss cheese. It makes a great toasted cheese sandwich.

4 lb USDA Prime Ribeye Roast getting ready to go on the smoker in a few hours. Will post more pics when it comes off this evening.

Beach13's picture

The last time I did that, I smoked it till about 100° and then cast iron seared it while basting it with butter till 125°.

Sackbird's picture

Damn!!!! That’s going to be epic bro. The most expensive cut of meat I’ve ever smoked was a big ass beef loin. It was my first go with a cut like that. It came out rare but it was so fk’ing good. Might do it again once I get my next bonus check lol.

I hear you bro! Yeah, this shit is not cheap but it’s sooo good! I paid $70 for this 4 lb cut, but at the end of the day I would pay more to take my wife out on a date for a similar meal.

Sackbird's picture

That’s so true. We’re so quick to go out and spend $100 on dinner but then cringe at the sight of $15/lb meat. It’s all about perspective brother.

I like to shred the drier end of the flat and use it for sandwich meat. It makes incredible sliders also.

Sackbird's picture

Dude hell yeah. Great idea. I’m guessing you throw some bbq sauce in that shit too, right?
