I can't find the study but...
Apparently if you pan fry beef, drain oil, and wash the beef in a strainer, the fat content is near that of 95% lean.
For the cheap guys (me) this sounds aawesome

Weigh the meat after you drain the fat and see how much your 1lb of 80% lean is left.
I think if you factor in the "lean v fat" ratio, pound for pound you're getting more beef in your pound of 95% lean. Therefore, the higher price isn't all that much after all.
The study factored in everything nearly the same.

I get grass feed sirloin that's very very lean from local butcher. He gives me center cut and only fat is in the marbling of the meat. 5.00 bucks a pound.
Butcher shop owns there own huge as farm so it's all there own products.

The local places are getting stupid because of all the yuppies moving in.
The best prices are usually at Mexican Butcher shops.
Contact a local butcher to find a farmer that raises grass and grain fed beef. Usually you can get half a beef for around 1.75-2.00 bucks a pound processed.

I've asked a few places. It seems these places here aren't as cool as they used to be. They charge more for that. I blame the sudden boom of yuppies here.
