I like my chicken saute in lemon juice with a little olive oil!

I love to saute chicken breast in lemon juice with a little bit of olive oil or grape seed oil. I prefer the taste of olive. I smother it in capers and sprinkle with thyme and rose merry and serve over a bed of brown rice with steamed asparagus. This is one of my favorite 15 minute meals. I wonder though if the olive oil is not the "cleanest" way to cook it. I know olive oil is healthy but is it the best way is my question? Anyone have any thoughts?

56tooI make something very similar to that. I love those capers. I also use olive oil. I mean that HAS to be good for u. Isn't that what jesus used? LOL
Give coconut oil a try.
Just makes me think of my favorite dish, Chicken Francese!! Chicken Cutlet saute in lemon juice, white wine and butter sauce!! A must try and can always tweak it a little to make it more healthy, using a whole grain flour, find a substitute for the butter!!

56tooThanks for sharing that John, I also love this one but dont make it very often because of all the butter. Ill usually subs the butter with olive but u know its just not the same
