Great carb sources that aren't oatmeal or sweet potato
I pretty much eat the same foods every day and my main sources of complex carbs have come from oatmeal and sweet potatoes over the past two years.
I'm done. I've hated the taste and texture of both of these foods since the first time I tried them and after two years I'm done with them. I just cannot stand them any longer. I will not make these foods ever again for myself. Not going to happen. HATE THEM.
That being said I need a new good source of complex carbohydrates. I'd love to be able to get all my carbs from veggies, but that's damn near impossible. I already struggle to get in all my macros and veggies are just too dense with not enough complex carbs. They're a nice addition, but they cannot be my base carbs.
What are good sources of complex carbohydrates with a low glycemic index that I might be able to substitute oatmeal and sweet potatoes for? I'd prefer to stray away from pasta and breads as they're usually very processed and fairly high GI.
What do you eat (other than the aforementioned antichrist carbs)?

quinoa, brown rice, how about just regular white potato instead of sweet, It's got a bad rap but do some research and you'll see it has roughly the same nutritional value as sweet potato's.. sweet has higher vitamin A & C
Another good one is boil your brown rice in chicken broth... Lately I've been mixing my oatmeal and eggs together just throw them both in the microwave on power level for for about 3 or 4 minutes and then sprinkle cinnamon on it once its done. It's actually really good! My new favorite meal

Here lately I've been making a mixture of brown rice, black beans, and Barilla protien plus pasta.

i usually make spanish rice/blackbeans with some cheese on top
spanish rice:
2 cups rice
1 can diced tomatoes
4 cups chicken stock
1 small onion
2 cloves garlic
dice onions/garlic and saute in 2 tbsp olive oil, add rice and toast lightly
heat chicken stock till with the whole can of tomatoes
pour rice/onion/garlic mix into chicken stock and bring stock to a simmer
cover and let sit for about 20-25 minutes stirring occasionally.
the beans you just soak overnight and then boil till desired texture..
easy meal the black beans i buy are 11g of protein for a quarter cup and i usually eat 1 1/2 cups of rice and 1 cup of beans it comes out to something like 800 calories 46 grams of protein 150 carbs and 1 gram of fat

Chicken stock is loaded in sodium. Look for low sodium.
Lentils,quinoa, millet, beans, brown rice.
Terephthalic Pt...Woah there bro. I think you need to reevaluate your definition of low glycemic index. Millet has a GI of 71! That's higher than most processed carbs.
But thanks for the lentils and quinoa I'll look into how those fair with my mouf.
Easy fawking lentil recipe
1 whole onion
6 cloves of garlic
Couple of bay leaves
2 cups red lentils
6 cups of water
3 tablespoons of curry powder
Salt to taste.
One cup low fat coconut milk
Sweat the onions/garlic until caramelized, add curry powder, then add water/coconut milk and lentils. Simmer until the lentils are tender.
I haven't made millet in FO Eva. Maybe that's a good thing.
