I am doing a chicken rice combo 3x a day in addition to my other food, and I get bored. So here is my latest tasty meal:
100g chicken breast
150g white rice
20g coconut oil
1-2 cups of veggies, I use celery, kale, bell peppers, cabbage, onion.
chop up the veggies smaller = faster meal prep
boil them in 2 cups of water with salt if you are allowing any salt in your diet, otherwise I just use pepper and garlic powder, and onion powder. HOwever, I recommend no spice.
blend the chicken and rice in a blender with the soup water and add to the pot.
add the coconut oil. I have made this with 10g oil, and with 20g and it tastes the same.
Tastes like a thai coconut chicken type soup.

My issue is that I use. Coconut oil everyday in my protein shake, and it's practically flavorless
Your right it tastes. The same at teng or 20g of coco oil (hence the very little taste factor)
I like adding some oil for health purpose!
If. You want a better. Coconut flavor Use unsweetened coconut water while cooking the rice, or at the final step add unsweetened coconut milk while blending to taste.
Now if you want to really amp up the Thai flavor. Without adding a ton of calories, go for nuoc mon (fish sauce) a few drops, and a few drops of sriracha.
I also recommend ginger, lemon grass, and a touch of galangal to get a true traditional flavor.
Shuck a large oyster and reserve the shell and oyster.
Heat the shell in the. Oven to 350 make. A. Cilantro infused oil. Chop green onions thin on bias, prepare a hot pepper oil.
When ready to serve remove and plate the shell.
Place some drops of the Cilantro oil in the shed, add the oyster cover with a few drops of pepper oil.
The shell should be. Cooking the oyster and sizzling.
Garnish onions
It's nice with a soy sauce as well
