Calves liver definetly with onions. Start onions same time to caramalize the onions and not burn them. I also like buying beef heart. Can get a huge one at stop and shop for like $3. Cut off the fat, slice and fry.
Onions and garlic, occasionally some hot sauce. I eat it only once a month because the cholesterol in liver is a little high, not enough to kill you but enough that you dont want to eat it more than a couple times a month.

Every one I know that eats clave’s liver is now dead.
But I don’t think it was the calves liver, they were all from my grandparents generation. It was more or less old people’s food lol. Used to see it as a dinner special at sit down restaurants but not any more.

And includes one of the most nutrients, 10x more than beef.
