11 lb Brisket, Prep- Just let the Brisket rest, get room temp, trim a bit of fat, pat dry, baste with a bit of oil
Rub: Salt, Black Pepper, White Pepper, Paprika, Garlic, Cayenne Pepper, Brown Sugar, Cumin
Wood Used: Post Oak an Mesquite
Got some low calorie mac and cheese , spinach and baked potato to go with it.
Low calorie mac and cheese is just mac and cheese shell kind, half of everything in the cheese sauce, and portion size about a 1/3rd
