low carb lasagna

needed:yellow squash or zucchini (I use both)
jar of commercial spaghetti sauce
cottage cheese
three eggs
shredded cheese(preferably an Italian blend but whatever you taste are)
9x9 glass baking dish
method : slice the squash and zucchini thin,this will take the place of the pasta.
beat eggs and blend with cottage cheese,i usually use a two to one ratio cheese to eggs,add a little of the shredded cheese to mix as well
in a glass dish spoon a little of the sauce on bottom and top with shredded cheese.Cover this with a layer of zucchini.Then spoon the cheese mix and spread around evenly.cover this with another layer of squash or zucchini.Then layer a little more sauce and then top with shredded cheese.Bake at 375 Fahrenheit for 45 minutes.
note: a very good twist is to add chicken or shrimp on top layer.
grams come out about two to one protein to fat and calories are about equal.Carbs are minimal.

Update: I forgot to tell you to pre cook the squash and zucchini just a bit or it can become a little too watery.
