Protein Pancakes

While I think my failed attempt at protein pancakes was a shitty pan, I wasn't 100% satisfied with the recipe either. Would love to hear the eroids communities favourite protein pancake recipes!

I just bought some "pumped up pancakes" from smoothie king. Dunno how they taste but 1/2 a cup is 20 grams of protein. 25 grams of carbs. 125 mg of potassium. 370 mg of sodium. 9g of sugar. 200 calories. 4g of total fat and 15mg of cholesterol. I bout em Cus I always sneak a waffle n syrup at night we'll from time to time. So I hope they help

Pumpkin protein pancakes
1/2 cup oats (40g)
1/2 scoop (10g) vanilla whey (or oat flour/almond flour)
1 tsp baking powder
1 tbsp granulated sweetener
1 tbsp cottage cheese or greek yogurt (can omit but makes them really moist)
1/4 cup pumpkin puree
1/4 cup almond milk
2 egg whites

Throw all ingredients starting with the wet ones in a blender. Mix for 10 seconds. Cook in skillet. This is my standard recipe, if you want diffrent flavors, replace the pumkin with banana or sweet potato or apple sauce and changing the flavor of protein powder, like i make chocolate ones with chocolate protein powder and unsweetened coco powder. To make these low carb, I just use more protein powder and either a couple tablespoons of coconut flour or almond flour.

Usually I top these with a syrup make of a scoop of protein powder mixed with enough liquid eggs to make a creamy consistancy. You can also make a bomb frosting with a scoop of protein powder, a little stevia (to taste) nd a 1/3 cup fat free greek yogurt.

Protein pancakes are kinda my thing... Smile

Never tried any fancy protein pancake recipes myself. I usually go with Kodiak cakes and just crack a couple eggs in there. My girl made some banana coconut pancakes the other day though that were pretty good
Ingredients:
1/4 cup unsweetened coconut flakes
1-2 scoops Optimum Nutrition 100% Gold Standard Whey Vanilla Ice Cream
6 whole eggs, 2 egg whites
1 tbsp coconut oil
1 whole banana
Cinnamon, to taste
Sugar-free maple syrup, to taste
