precook 5 or 10 minutes in the microwave and finish up in the oven.
You get the same baked flavor/texture/taste in less than half the time it takes if you just baked it.

I was wondering if you've tried sweet potatoes? Red potatoes are ok, but vitamin quantity along w/ it being much more low glycemic than regular potatoes, Sweet potatoe should be in your diet somewhere. I wash them poke w/ a fork a few times (if you dont they can explode),then put them on a paper towel in the microwave for 2 medium potatoes I push the potatoe button 2x on the mirowave then start. poke w/ a fork to make sure it's soft in the middle. then I put a pack of equal and cinnamon on it, applesauce n raisins is good in the mix too even some walnuts. I eat the peel and all lotsa vitamins in the peel. For red potatoes I like to slice them boil them till soft, then top w/ plain greek yogurt(resembles sour cream)
I get down in the kitchen bro, that's where I've made my real gains... It's a lifestyle. Smile Hope this helped you a lil, cause I made myself hungry.

Regular potatoes arent off the menu completely for me, But 12lbs, Hell unless your competing real soon, I'd make a mess of sliced potatoes, onions, green pepper, mushroom, cooked in evoo, and 6-8 eggs prescrambled. I usually use a lil shredded sharp chedder too... then a big mess of mash made w/ skim milk. no butter, no salt. I use cayenne pepper and black pepper and some garlic powder, not salt

Sweet potatoes are difficult to cook in the oven properly. Boil them and a swear youll love it, the skin pulls rite off and you can sprinkle a little splenda on em and chow down. You can do that with any potatoes to help them hold moisture.

try blending the two.
Mash the sweet potato and regular potato(s) together with a dash of Greek yogurt or milk.

You can even add unflavored WPI to up the protein.

I like to boil mine because the microwave tends to take ALOT of moisture out. Just stick four or five in a pot at a low boil and let em sit, then like he said stick them with a fork or knife, if its easy to go in your all good.

easiest way is in the microwave, wrap in plastic wrap and heat it, differs depending on microwave, get a fork and if you can stick it in easily then its done, they taste best when done in the oven though.
