Hue Chicken Salad

This one is ripped straight out of my favorite Chefs Cuisines Of Asia course guide at the Culinary institute. If using 1 chicken divide by four yall. This is made for a restaurants service. I will almost always post recipes with portions of ten, or recipes that are of sound ratios. Props to Chef********* CIA
Yield: 10 portions (NOTE: divide by amount of chicken you cook off at once! SOUND RATIOS!!!)
Ingredient Amount
Chicken, whole 4 ea.
( I used a grade of chicken called a ROASTER it is slaughter at 14 weeks old. The muscles are more mature, and have a better BOILED prepartion than a FRYER, Or BROILER. That is the 3 classes of chickens. The other two are younger birds. NOTE a Roaster can weigh as mush as 7 LBS
Black pepper, coarsely ground 2 Tbsp.
Sugar 4 Tbsp. (turbinado or raw)
Lime juice, fresh 1 Cup
Onion, peeled, sliced into paper 1 Cup
thin rings, soaked in cold water
Chilies, Thai bird, thinly sliced 10 ea.
Rau ram leaves, torn 2 Cups
Mint leaves, torn 2 Cups
Cilantro leaves, torn and stems minced 2 Cups
Peanut oil, aromatic ¼ Cup
Fish sauce ¼ Cup
Vietnamese Sambal ¼ Cup
Boston lettuce, washed and trimmed 10 leaves
Banana leaves triangles, plate garnish 10 ea.
Red Fresno chilies, paper thin slices 6 ea.
Shallots, crispy 1 Cup
Mise en Place
1. Bring stockpot of salted water to a vigorous boil. (salty just less than sea)
2. Add chicken and return to boil, simmer 15 minutes then turn off the heat. Let the chicken sit in the pot, covered, for 45 minutes or until 165° F internal temperature.
3. Remove chicken and plunge into cool water for 10 minutes. (ICE BATH)
4. By hand shred chicken meat into thick strips, reserve. (Big Strips)
At Service
1. Line a plate with banana leaf triangle and lettuce leaves.
2. Combine chicken, black pepper, salt and sugar and toss gently.
3. Add lime juice, onions, chilies, rau ram, mint, cilantro, oil, fish sauce. Toss gently.
4. Taste and adjust seasoning as necessary.
5. Plate salad and steamed rice. Garnish salad with three rings of chilies and crispy shallots.
remember you can sub any ingredients, But all involved used in moderation help support a ever changing diet which promote a healthy life style. Chicken and rice is BORING

Like I wrote, I reccomend getting to know your butcher and getting the right type of chicken. The diffence in flavor and moistness is comparable tpo grilling a rib eye or grilling a shank.

HAHA when I went to the culinary institute I was drinking Champagne Cognac and eating lamb racks while the kids around me stared. Got some nice teen pussy also. I would wake up, smoke sour d's on the Hudson river at sunrise.

hell yeah! we used to bring girls over for meal time and smoke down too! ive tried sour diesel. good stuff. my buddy's friend has some top notch stuff that smells like straight blueberries (blueberry yum yum?). it is a big hit right now.

Theres a time for everything In life. I gone back and forth. No big deal to me. Its really the booze that reason its ugly negative head, but on the same had... Some petite Cognac and some blueberry kush, and a soft woman would be really amazing right now!!!

vietnamese food is the shit. A lot of people are afraid of fish sauce but it can add some great flavor. especially mixed with chilis, cilantro,spices ect.....

This one can be super healthy! Go to the butchers and specifically request a ROASTER chicken.
On the plate it should be cradled inside the Boston lettuce leaves "composed salad" Its served like a little lettuce taco or wrap. This is one of my favorite dishes in the world. Lots of spicy, Super healthy, and by using a much more mature chicken the meat does not dry out and get all nasty like that chicken yall have been boiling the shit out of for years. It should be glossy and moist still. Over cooking it does not remove more fat, if anything it destroys the flavors(which are better in this ROASTER bird)
3 grades of chicken, and they all do better with certain cooking techniques. Dont use a Fryer and boil it kids
