RustyhookerDinner fixins! We like potatoes and we like french fries so check this out. I learned this bout 20 years back at local restaurant.
Get 1 potato per person or more if desired. Clean and quarter them long ways so you end up with skin on wedges. Dip in oil, I like olive but there's plenty options. Set on cookie sheet skin side down. Season if you choose. Bake at 425 til golden, slight browned. 45 mins...
Oil coating makes it taste like wedge fry and baking keeps middles fluffy. Less fattening than fries but very tasty
