For instance lycopene which gives tomatoes their orange color and has many excellent health benefits. Here’s the kicker. If you eat a tomato it’s very hard to absorb the lycopene and you may absorb only 15 or 20%. Since lycopene is fat soluble if you sauté the tomatoes with olive oil on a low flame the chemical changes allow the lycopene to extract and get captured in the days of the olive oil and this will give you just about 100% absorption.

Green tea has polyphenols that are healthy but if you add cow dairy the air bubbles in the milk or cream will encapsulate the polyphenols making it very difficult to benefit from the tea. Nut and soy milks do NOT create the same issue.
