Here is my recipe from my Thesis written on buffalo sustainability in America.

Buffalo Sliders
Mise en place

Ground buffalo
small brichoe rools, potato rolls, etc.
WHite cheddar slices very small diced
SMoked Gouda slices
Saute Mushrooms (i prefer shitakes cooked shallot garlic thyme wine Seared hard diced small
arugala
Carmelized onions

Method
bring meat to room temp
Saute shrooms
Carmelize onions
fold in chedar small pieces, thin sliced and smaller than pencil erasers 1/8th inch to buffalo and mushrooms. Mushrooms should be patted dry of excess moisture
Form small paties to correspond with your burger buns
Grill saute steam burgers Etc.
Toast buns
top burgers with gouda, arugala, onions
