+ 8 Chicken and rice does not have to be boring

One whole onion. Diced (approximately 2 cups)
Two large green bell peppers. Diced (same app. 2 cups)
Half bundle celery. Diced ( you guessed it, 2 cups app.)
4 large chicken breast boneless. (Cut in cubes 3/4 ")

Personally, I only have one cutting board and one good knife so I dice the onions, bell peppers and the celery. store in bowls while i cut the chicken breasts.

I use a large cast iron skillet. Pre heat with sesame oil and butter. unless you're phobic then don't use butter.

Through your cubed chicken breast in the skillet I use a little bit of salt the pepper and some Lea & perrins Worcestershire sauce ( just a splash ). Maybe a little more sesame seed oil till I can smell it.

Cook the chicken thoroughly but not overdone.

When the chicken is done take the chicken out of the pan leave the sauce that you made.
Through the onion in to the sauce. Cook it for a minute or two. Then add the bell peppers.

Thats when i start my rice in a seperate pot. I make 4 cups for this. Every one should know how to cook rice by now im not telling you how to do that.
Cook the bell peppers for a minute. Stir it a time or two.
Then add the celery.

Cook it all for a few minutes.
I add these in that order because i want the onions done, the bell peppers almost done and the celery a little crisp.

Mix the chicken back in .
This will be a skillet full (expect to spill when mixing.)
I put a lid on that and turn the heat off.

By now the rice should be done.

Shovel rice on your plate and top it with the veggies and chicken.

Tonight , to mix it up a little. I used the same recipe but added it to pasta (instead of rice) and chicken broth for a soup.

This with a little oyster sauce and rice wine vinegar is basically the same as beef & brocolli from your average Americanized Chinese food joint. Super tasty. I like the celery idea, going to have to try this.

Making simple food good doesn’t take a lot of effort. I never understand when I read about guys eating just plain chicken and rice or other plain foods. I don’t use sesame oil much but it sounds delicious I’ll have to pick some up. Good post!

The sesame oil has a very distinct flavor. I love stir fry, hibachi type recipes.

Oh why do I let Costco make my rotisserie chickens? lol Well, I might be lazy, it's fast, easy and I peel the skin off so it's low fat! But good for you! +

Eating a whole Costco chicken is tough I can do about 3/4. They are twice the size of other rotisserie chickens or at least they usto be I go to Sams now no Costco in my town.

I have plenty of cutting boards. Lol
I myself have 1 good knife no one is allowed to touch lol its a cutco brand and damn its sharp. But i find myself using meat scissors to cut about everything.. am i the only one ?

Need to check out the meat scissors.

I mentioned the soup. I cooked the same recipe but put it all in a big pot with cooked pasta (1 pound dry). Then filled to the top of the ingredients with an organic chicken broth.
Man Alive it is good.

Always appreciate a new twist recipe on fundamental foods. I am also a fan of a dash of Worcestershire sauce. A new spice I have run across is called Pink Poppy Dip. It is an amazing seasoning for chicken/pork. Online only. Highly recommend. +1 Fang

I'm going to try that one. A good seasoning I found for both steak and chicken is Sure Shot Sid's Gunpowder seasoning. Really sets a good steak off.

Reminds me I need to invest in a 2nd chopping board! Great recipe, I’ve always used a lot of oven bags to cook my chicken. You can throw the diced breast, peppers, onions, potato, rice and what ever else you fancy all in one bag add seasoning (or buy a premixed bag) tie it up and throw in the oven for 45 minutes. No stirring or messing around needed, tender, tasty chicken every time.

I like my celery to remain crisp though. Afraid it will come out mushy.
