+ 7 Baked Scotch Eggs

My chickens pump out a ton of eggs so I am always looking for creative ways to eat them. Came across this recipe which is pretty tasty.

Ingredients:
1 lb ground turkey sausage (I used pork sausage - turkey is only used when cutting)
1 lb ground turkey breast (I used ground beef)
1-2 Tb tomato paste
1 tsp black pepper
1 tsp thyme
1 tsp sage
1/2 c bread crumbs (I like the panko) - could use flour instead also
1 Tb potato or rice starch (corn starch worked for me)
8 boiled eggs
1 egg (not cooked!), whisked in a small bowl

Directions:
1. In a large bowl, combine ground meat, tomato paste, and seasonings. Divide into 8 portions.
2. In a smaller bowl, combine bread crumbs (or flour) with starch.
3. “Wrap” each egg in a portion of meat, making sure to cover completely.
4. Dip each Scotch Egg into beaten egg, then roll in bread crumb-starch mixture.
5. Place Scotch Eggs into the fridge for 30 minutes to 1 hour to ‘set’.
6. Preheat oven to 400 degrees F. Bake eggs until meat is cooked through; about 30 minutes

Sounds delicious but I don’t think I could eat 8 of them. If you had any left over can you say if they kept well? I will prob 1/2 the recipe when I make it.

My grandma makes these for me on the holidays, minus the tomatoe sauce, and I love them! Definitely not the healthiest but man are they good

I'm guessing at some point you shell the boiled eggs... otherwise, you britts are pritty hard core... not as hardcore as the scotts and their haggis, but glass eating hardcore nonetheless.

I eat at this little Mexican restaurant.
The chorizo and eggs if they are authentic,
Will have at least a half a shell in it .

Sounds awesome. I have a friend who raises chickens and I have a constant supply of fresh eggs, for which I'm very grateful, but I was really needing a new way to cook them so this is right on time, can't wait to try it.

He has some Americana hens that lay eggs so big they look like goose eggs or something, they're unreal. Just three of those makes a massive meal.

I heard you could deepfry them also. That could put them a little more on the unhealthier side but I bet they would really be dilicious.

Sounds delicious. Theres a restaurant in Universal Studios called Finnegans that makes good one served with spicy mustard.

They kind of had a pizza taste to me due to the tomato paste and all. Could skip the tomato paste and try different seasonings and dipping sauces for a little variety.
